yum.. time for a change.. no cakes no muffins this time tea bread... here's the recipe
385g plain flour 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 30g butter/margarine 250ml clear honey 1 egg, at room temp., lightly beaten 1 1/2 tablespoons grated orange rind 175ml freshly squeezed orange juice 115g walnuts, chopped (i added raisins instead)
Preheat oven at 170 C / 325 F Sift together the flour, baking powder, baking soda and salt. Line the bottom and sides of a 9 x 5" (23 x 13cm) loaf tin with greaseproof paper and grease. With an electric mixer, cream the butter/margarine until soft. stir in the honey until blended, then stir in the egg. Add the orange rind and stir to combine thoroughly Fold the flour mixture into the honey and egg mixture in 3 batches, alternating with the orange juice. Stir in the walnuts.
Pour into the tin and bake until a skewer inserted in the centre comes out clean, 60-70 minutes. Let stand 10 minutes before turning out onto a rack to cool.
mm.. to say that it's 100% a bread.. i dont think so.. cause there isnt any yeast in the recipe.. but well it tasted like bread-cake.. there's abit of bitter taste maybe because of the orange rind.. i've used orange rinds quite a number of times before and it always gives me a bittery after-taste... and em.. there wasnt alot of orange taste... maybe next time i should get the juice thru the machine.. rather than using my hands to squeeze them.. not much different ain't it? maybe i should try on peel-fresh ? hrm.. i dont know .. the honey was somehow an alternative for the sugar.. so this tea-bread is not sweet but yet u can taste a lil bit of honey and ti's not stale... ahahah alright... ciao lovelove Monday, October 31, 2005 05:01 pm by Swee San
