for Grandmama

Grandmama gave me a choice whether to make banana cake or pandan coconut cake but since there was no banana at home, i went for pandan coconut cake.

The cake turned out moist and it was quite nice although i am not a big fan of pandan coconut cake. You know what, within 30 minutes after the cake was out of oven, the cake has distributed out. *hahaha* and i have got an order from my aunt to make another one tomorrow.

Said Miss Cake: Before I was put into the oven for baking, I was yellowish and butter-y




Said Miss Cake: I got tanned after baking, still moist and i think i am yummy

Sorry, i didnt cut the cake and take a photograph to let you look at the inside because i was busy cutting the cake and stuffing it into my mouth *oppsss...* ...i mean stuffing into other people's mouths.

Well, here's the recipe for this cake:

Ingredients

Cake
(A)
270g butter
230g sugar

(B)
5 eggs
60ml coconut milk
2 tbsps pandan juice

(C)
240g flour
25g custard powder
30g dessicated coconut
1tsp baking powder

Topping
40g butter
35g icing sugar
55g desiccated coconut

Directions

Cream (A) till light and fluffy.
Add (B) a little at a time and cream till smooth and light.
Fold in (C) and mix till well blended.
Pour it into 10" round mould.
Mix all the ingredients in Topping and spinkle on top of the cake.
Bake at 175C for 50 minutes.
Serve.
