2nd cupcake attempt.. i ran out of chocolates.. and merely 200g of cream cheese.. so... i made.. carrot cupcakes instead.. :P
here's the recipe.. 3 Cups peeled grated carrots, ends removed (1 lb.) 2 Cups all purpose flour 1 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 4 large eggs 2 Cups granulated white sugar 3/4 Cup vegetable oil 1 tsp. pure vanilla extract 1 Cup chopped nuts or raisins (optional) Frosting: 1/3 Cup cream cheese 1/4 Cup butter (1/2 stick) 1 tsp. pure vanilla extract 2 Cups powdered sugar i reduced the amount of sugar to 50% ...
Preheat oven to 325°. Line muffin tins with paper cupcake cups. Peel carrots, chop off ends, and grate finely, which is easiest using a food processor. Sift flour, cinnamon, salt, baking soda and baking powder together, set aside. In a large mixing bowl, beat eggs until well blended. Add sugar, oil, carrots, and pure vanilla extract, mix well at medium speed. Add flour mixture and nuts or raisins (if desired). Blend on low speed until just mixed, spoon into cupcake cups, about 3/4 full. Place the pans in the preheated oven, bake for 12 minutes. Switch the pans so the pan from the lower rack is now on the upper rack, and bake for 12 more minutes. Check for doneness–cupcakes should be browned and springy to the touch. Let cool completely before frosting. To prepare frosting: let cream cheese and butter come to room temperature. Blend thoroughly with pure vanilla extract, then beat in the powdered sugar at low speed. Add food coloring if desired; it gives the frosting a nice spreading consistency. If you don’t use food coloring, add a drizzle of milk to make the frosting spread more easily if desired. Yield: 24 cupcakes. i made 28
ok.. i didnt add any nuts or raisins cause i couldnt find any.. so i just left it with grated carrots.. i ddint add much sugar so it wasnt that SWEET.. this time the cake rise.. and yeah.. the texture's quite dense.. but the creamcheese frosting probably went alil bit.. wet.. maybe i dint add enough icing sugar.. yeah... this cupcakes cute..!! ahhaha ciao peeps xoxo |
at Manhattan Fish Market! we went to the one in sunway pyramid it was my first time dining out in MFM anyway.. haha it's a family seafood restaurant offering casual western and continental ocean cuisine.. so.. we order some stuffs tho... they had a new dish... called Popcorn shrimps. ![]() well this popcorn shrimp is really alot !! and the sauce was nice.. em.. it's nice.. but er.. the shrimps cut into small small pieces.. then we ordered Garlic Butter Mussels as appetizer ![]() this was reccomended by ling.. cause she ate before and she said it was nice.. yeah.. quite good.. the sauce was buttery and nice... but the bread.. yucks... it's hard... and if the dish was a lil hotter.. it'd be great.. i've eaten the mussel clams in Osaka (japanese restaurant) and that's nicer.. my opinion lah.. then i ordered the Manhattan Favourites Grilled Norwegian King Salmon with chips.. yeah.. hahaha... should have ordered the rice cause after i ordered chips.. ling said the rice is nice.. but anyway.. nvm.. the salmon's nice.. the sauce not bad too .. tasted a lil bit like the garlic butter mussels sauce.. but the amout of sauce wasn't enough.. (yeah .. for a person that can eat 2 bowls of dahl along maggi goreng. i think the sauce they gave me wasn't enough... ) then ling ordered.. super-sinful Sweet Alabama Smoothie ![]() that's chocolate vanilla and peanut butter smoothie... *gosh* !!!!! and .. OI !!! LING !!!! why la the pic ... got ..... censored leh .!!!!! but this drink .. has more peanut butter taste.. anyway... i still have yet to try alot of dishes in Manhattan Fish Market so.. i'll still go again.. ahah |

i found these really cute measuring cups while i was looking for moulds in my kitchen..
i found alot more stuffs.. that i didnt know existed in the kithen.. like... halloween pumpkin mould... pig mould.. gingerman mould... and there's 2 of these... 1 in transparent.. 1 in yellow... ok.. so i think i'll post the recipe up tomorrow if u guys wan...
it doesnt have the cake texture ... ah.. i dont know how to explain it ... ok so.. after that .. i cut the cake in the middle ... and put in some redbean creamcheese mixture ... and then just leave it in the frige .. then... yeah... the redbean filling ddint quite stay solid.. it was a bit soft ... maybe because the cake was heavy.. the filling kinda like .. flow out...

em.. the eggs wasnt folded like the tamago.. because i used only 2 eggs ... for me alone.. and there were quite alot of fillings.. but yeah... u can't go wrong with eggs... omelette topped with a lil mayo n thousand island... tada... yummy breakfast to start the day .. and then yesterday...

Finally made my step into the Ramadhan mood. Wait! I am not puasa-ing! I am not a Muslim! Nevertheless, for the love of good foodies, i made my step to the Ramadhan market where you could see a great variety of Malay food. Being ulu, i have not tried many food. In fact, staple Malay food like Nasi Briyani and Nasi Kandar are rather strange to me. If you would to ask me how they taste like, I really couldnt answer u. I would most probably think they taste like Nasi Lemak because that is the only Malay rice i have eaten most in my entire life. Damn! i am very ulu! However, my uluness was not shown on my face and i gladly made my entry to the Ramadhan market; diffusing into the crowd although in my heart, i am one big Ulu. Take a look at what me and sweesan, also not forgetting one of my fren, found in the PJ Section 14 Ramadhan market: ![]() Looking yummy huh? Introducing Mr. Ayam Percik ![]() Sotong-Sotong and Ikan-Ikan Bakar-Bakar ..AHahaha... ![]() Miss Kuih with coconut head topping ![]() ![]() Look at how the Makcik prepared Roti Jala ...seems very hebat right? ![]() Nasi Tomato...rather curious ![]() Very colourful Kuih Muih ![]() ![]() The dishes served with Nasi Briyani ![]() Otak-Otak..I think the Panjang one nicer than Ketul one... Well, i guess that is all about the Ramadhan Market. Will try to head towards more Ramadhan Market. Heard that the ss18 Ramadhan Market in Subang is good as well. Perhaps, another attempt? p/s : Swee's additional comments.. ahhaha well personally i think the food they sell there are not really like .. WOW !! or .. super nice.. it looks nice althought.. i bought the ayam percik, roti jala, samosa, nasi briyani.. yeah.. (for my family ok..) well maybe i went to the wrong stall or something but it ddint really reach to my expectations.. the puasa market is a nice place / chance to be exposed by all sorts of malay foods.. they have basically most of the things (except i couldnt find mr. nasi lemak) .. it is a good eye-opener for people like me who dont go that often.. (this is not my first time tho..) but taste wise.. maybe because they cook in huge quantity.. and they have to prepare the food earlier so that when the crowd comes.. it's more convenient.. but em... some of the taste was somehow.. a lil bit off.. so.. yeah.. taht's about it ... |
This is my very first entry in this blog or rather in any blogsite. So mark down this moment of victory. hehe...anyway, here i am to blog about the very first omelette in my life. Let me tell u something, i have never actually made any egg-ie foodie in my life except for boiled eggs because they are easy and u dont have to cook them using oil *Im afraid of oil!* By the way, i think my omelette was a success. Kinda proud of myself actually for starting the stove to pouring the oil, heat it and fried the egg! OMG! i nearly cant believe what i had done. I am not exaggerating but as much as i like cooking, the idea of frying food is still scary to me. Imagine the oil splashing on ur hand? Hurts right? I have this experience, a rather silly one and perhaps, it was such a disgrace. I accidentally dipped my finger into the hot oil when i was frying onion ring! My finger was probably cooked - maybe. *shakes head to myself* Nevertheless, one fine morning, with courage and bravery, i decided to make omelette. A good one! for a good start of the day. Do not look down on omelette, i woke up 45 minutes earlier to prepare but i ended up spending nearly 2 hrs! So i have concluded - Omelette is not an easy task! Look at what i have got to make my very first omelette: ![]() Slice crabsticks, sausages and button mushrooms ![]() Egg with milk With the ingredients, i started the fire and next: ![]() Looked fine, right? Then, i waited awhile - thinking what to do next? I was busy taking pictures actually. Haha... ![]() This was my very first omelette. Doesnt look so pretty huh? Anyway, it was down in my brother's tummy and most probably, flushed down to the Pacific Ocean already. AHahaha... I wasnt too satisfied so i tried again n made my second and third omelette: ![]() Note that there were two of them. I think i made quite an improvement huh? and a rather quick one right? -yeemei- |
