for Grandmama

Grandmama gave me a choice whether to make banana cake or pandan coconut cake but since there was no banana at home, i went for pandan coconut cake.

The cake turned out moist and it was quite nice although i am not a big fan of pandan coconut cake. You know what, within 30 minutes after the cake was out of oven, the cake has distributed out. *hahaha* and i have got an order from my aunt to make another one tomorrow.

Sorry, i didnt cut the cake and take a photograph to let you look at the inside because i was busy cutting the cake and stuffing it into my mouth *oppsss...* ...i mean stuffing into other people's mouths.

Well, here's the recipe for this cake:

Ingredients

Cake
(A)
270g butter
230g sugar

(B)
5 eggs
60ml coconut milk
2 tbsps pandan juice

(C)
240g flour
25g custard powder
30g dessicated coconut
1tsp baking powder

Topping
40g butter
35g icing sugar
55g desiccated coconut

Directions

Cream (A) till light and fluffy.
Add (B) a little at a time and cream till smooth and light.
Fold in (C) and mix till well blended.
Pour it into 10" round mould.
Mix all the ingredients in Topping and spinkle on top of the cake.
Bake at 175C for 50 minutes.
Serve.

Hugo and Daisy's Birthday


i made carrot cake for them.. with cream cheese frosting in between the layers..
this time.. the cake turned out very very nice .. heh heh..
the texture was soft n not dry and the sweetness was just nice ..
with the extra cream cheese frosting in the middle, i think it's nicer.. ahhaa

i've posted a recipe for the Cupcake version.. this one is different.. from another book actually.. hehe

AHAH ok.. this may not be the prettiest cake u see.. but i just bought the piping thingy.. so just wanted to try out.. ahahha.. it wasnt enought to cover the whole top part anyway...

Ingredients

1 cup (250ml) vegetable oil (i used melted butter instead)
3 cups sliced carrots
1 1/3 cups (250g) firmly packed brown sugar
3 eggs
3 cups (720g) firmly packed, coarsely grated sugar
1 cup (120g) coarsely chopped walnuts (i dint add any because i wanted to give my dogs)
2 1/2 cups (375g) self-raising flour
1/2 teaspoon bicarbonate of soda
2 teaspoons mixed spice (ok, i didnt have this so i dint add any)

cream cheese frosting
30 g butter
80g cream cheese, softened
1 1/2cups (240g) icing sugar mixture

Method

Preheat oven to moderate (180 - 190 C). Grease deep 23cm round cake pan, line base with baking paper.
Beat oil, sugar and eggs in small bowl with electric mixer until thick and creamy. Transfer mixture to large bowl, then sifted dry ingredients.
Pour mixture into prepared pan, bake in moderate oven about 1 1/4 hours. Cover cake loosely with foil halfway throught cooking. Stand cake 5 minutes; turn onto wire rack to cool. Spread Cream Cheese Frosting

Cream Cheese Frosting
beat butter, cream cheese in small bowl with electric mixer until light and fluffy; gradually beat in icing sugar.

Baked Potato with Cheesy Ham and Mushroom

First attempt baking potatoes. Spent a few good hours from cleaning the potatoes, cut the ingredients to watching the oven to check if the potatoes were cooked.

I was quite anxious and at the same time, i was worried if the potatoes didnt turn out ok coz i was supposed to make sure that my potatoes were ok and safe before serving my friends for potluck.
I guess the potatoes were really safe and fine right?


Look at what we've got: Cheddar Cheese+ Parmesan Cheese+ Ham+ Button Mushroom

Here's the recipe:

Ingredients
Potatoes
Cheddar Cheese
Ham
Button Mushroom
Parmesan Cheese

Directions
Clean the potatoes, cut into halves.
Slice the ham and button mushroom.
Sandwich the ham and mushroom with the potatoes. Cover the ham and mushroom with cheddar cheese and also parmesan cheese.
Wrap with aluminium foil.
Bake at 220 F for about 1 hour.

Porridge Steamboat


there are quite alot of places that has steamboat, but this place has extra suffs.. it's porridge + steamboat.. so meaning the soup is porride and the steamboat stuffs.. steamboat loh !

anyway this place is in Bayu Perdana, Klang
it's very reasonable actually.. the place also has Bah Kut Teh in the morning.. the bkt is also very nice.. but maybe the feng shui is not good.. ahhaha.. not alot of customers..

oh.. they also have other dishes.. like those 'tai chao' =)

Lemony CheeseCake

just wanted to make some simple non chocolate cheesecakes ...

so.. i settled for .. LEMON !

i kinda like Lemon... well lets see ...
i like iced lemon tea
fried chicken with concentrated lemon sauce
lemon honey drink ...

ah .... ok... enough...

my mum dunno how to make cheesecake actually.. ahhaha
but she knows like a million more dishes than me..

Recipe

Ingredients

Tart Base:
200g Digestive Biscuits, finely crushed
100g Melted Butter

Filling
(A)
250 Cream Cheese
20g Sugar

(B)
2 Egg yolks,
20g Sugar
30g Lemon Juice (abt 1 lemon)
1 lemon zest grated

(C)
1 1/2 tbsp Gelatine
60g water

(D)
150 Whip topping cream, whipped

(E)
1 egg white
20 g Sugar

Method

Tart Base:
Mix the biscuit base ingredients until well blended. Press onto bottom of you desired mould.
Refrigerate while u're making the cream cheese filling.

Filling:
Cream (A) until light and smooth
put (B) in a bowl and place over double-boiler. Cook until light and fluffy while stirring constantly (I did not put in a double-boulier. i just boiled it straight. but be sure to keep the fire slow and stir constantly, or else the egg will cook !)
Premix (C) and place over double boiler. Stir until gelatine dissolves.(i didnt use db again. i just used hot water instead and stir till the gelatine dissolves) Add it into (B) and mis until well combined. LEave to cool slightly. Add into (A) and mix until well blended
Fold in (D) and mix well
Whisk the egg whites in (E) until soft peaks. Add the sugar. Whisk until still. Folt it into the creamcheese mixture. Mix till well incorporated.
Pour it onto the prepared biscuit base. Refrigerate for 4 hours or till firm

Supper Treat after Exam Stress

What would u think of right after exam? It would definitely be a good feast after a long suffering.
We headed down to Asia Cafe for supper after collecting the webcam from Pyramid.
Since Mel+Sweesan have not tried eating there at night, i was the guide of the night; the leader of the night for JustHeavenly Crew.

We ordered Fried Mushroom coz the fried mushroom there was super nice. Its very crispy even when its cooled. The sour and spicy sauce dip was good as well. Have a look at the Fried Mushroom below. The picture was not so clear because i was using phone's camera.


Since the uncle selling the Tako Ball was concentrating so hard when making those yummy Takoballs, we decided to order Takoballs too. They have very nice packaging. The box was kinda cute actually; with the squid shaped hole on the box.




These are the tako balls in the box; there are a few different fillings in the takoballs

Also, not forgetting my favourite 'Taufu Bakar'. Its damn nice. The 'Taufu' is very crispy and the sauce is not too watery. You should really try this out! This is way better than the one from Pasar Malam.

*Feel fat after supper-ing* but of coz, no regrets!

18th-20th Century

This entry was suppose to be up a long time ago...but due to my laziness..there has been delay..so here it is...
another execellent makan place in Taman Tun (TTDI)..18th - 20th Century...




altho d interior looks alil like those of d kopitiams,u've to see it to feel it...

we ordered a couple of really sumptious food from the set lunch menu..to begin with the set lunch has about 10 choices of main course with appetizers, drink n dessert..even before we start,
we had to crack our brain to select our choice as all d name of the dishes were equally tempting.

hail the dishes...

1st..the appetizers..altho they came in pretty small portion on big plates..they practically justify
themselves with your first bite..if that make sense to you..haha

d drink of d day was syrup with cincau..credits given cos d taste was just nice..not too sweet..




main dish everyone...


spicy seafood spagethi...



me n a couple of other colleagues ordered this dish...omg its jus so yummylicious...even when i think of it now..im about to drool..the seafood..were juicy prawns, sum fish fillets n sotong..
d sauce is superbly creamy..i could have clean up the entire plate spotless clean..haha..but d
tiny bit of disappoinment may have been d spicy part..altho d name suggest it to be a spicy meal
it certainly lack the spiceness..so there goes the oomph...



pad thai kuey teow...

i think it meant pattaya kuey teow..din really tasted it..but colleague says that its equally mouthwatering...haha..n d kuey teow is fried with peanuts..alil..interesting...

last came the dessert..which we din quite expected...haha


vanilla ice cream on brownie...

simply brilliant to end our mini feast..haha..we left the place with a very satisfied appetite n we did
not burn a hole in our pocket when we paid the bill..its fun to have a great deal of a set lunch which
cost below 20bucks..definitely worth trying..haha..

in short d set lunch come in quite a variety..fusion of eastern n western food in short..my colleagues told me that the set lunch here is definitely a good catch..cos d ala carte dishes they serve during the nite mayb alil pricy..

went to the past..back to the future wit a full tummy...haha
