this one's from Nigella Lawson's book - Nigella Bites as well. this isn't a pudding as in dessert, but as in rifh heavy, airless souffle. this is certainly easy to make, toothsome and comforting to eat.
sweetcorn pudding Recipe:
5 eggs
510g can sweetcorn, drained
418g can creamed sweetcorn
(its 1 whole can of it, u can get them at hypermarkets)
300ml full-fat milk
300ml double cream (i used whipped cream)
60g plain flour
1/2 tsp baking powder
1/2 tsp salt
Preheat oven to 190 C and butter and ovenproof dish.
whisk the eggs in a large bowl, and then add, beating unenergetically all the other ingredients.
pour into the buttered dish and cook for about an hour, by which time it should have set within and puffed up slightly on the top.
Serves 8 (depending on portion)
if u want, u can sepereate the eggs and whisk the whites and turn into lighter, frothier affair. =)

i've not tried this before. i've never tasted it. i've never seen anyone i know cooked this before. so it's abit risky... but.. i did this for pot luck last saturday heh.. entry overdue i know.. but, i thought i'd just share the recipe here.
ok well, anyway, let's get to the topic don't be surprise by the taste of this dish, because it's orgasmic. (ha, as according to me) there isnt any coke flavour in it.. u can't ... will not guess that there's coke in it.. (unless u've made this dish before, or u're a pro-chef.. haha) but just one thing before i start, dont even consider using Diet Coke; it's full of fat or nothing. ha ok i didnt take pics on the process, because i was busy making other stuffs for the pot luck recipe : 2kg mild-cure gammon 1 onion, peeled and cut in half 2-litre bottle of coca-cola for glaze: handful of cloves 1 heaped tablespoon black treacle 2 teaspoons English mustard powder 2 tablespoons demerara sugar ok.. the trick is, there's a ratio for it .. like 1kg of ham = 1 litre coke = 1 hour cooking time.. get ? as easy as that. gammon is the name of the ham. u can get them at those "non-halal" shops in hypermarkets like giant or tesco. it's about.. RM2.++ for 100 gram. i got about 900gm for RM25. AND !!! don't buy the thing in slice, because u can't cook it.. haha.. if u want to make this dish, buy the whole piece.. say maybe 1 kg or something ok.. now for the cooking method. put the gammon in a pan, skin-side down if it fits like that, add the onion then pour over the coke. bring to the boil, reduce to a good simmer, put the lid on, throught not tightly and cook for just under 2 1/2 hours. but do take into account that if the fammon's been in the fridge right up to the moment u cook it, u'll have to give it a good 15 mins or extra so that the interior is properly cooked.
meanwhile, preheat the oven to 240 C
then the ham's done, take out from the pan (it's up to u to throw away the remaining coke liquid, u can use is for a black bean soup.. if not, then just discard it lah.. ) and let it cool.
then remove the skin, leaving a thin layer of fat. when i bought the piece of ham, it's the ending part, so there were more skin n fats on it..
anyway, score the fat with a sharp knide to make fairly large-diamond shapes and stud each diamond with a clove. then carefully spread the treacle over the bark-budded skin. gently pat the mustard n sugar onto the sticky fat. cook in a foil-lined roasting tin for approx. 10 minutes or until the glaze is burnished n bubbly.
(this is nigella lawson's way) i have no idea what is cloves / black treacle.. and no idea where to get them.. i used black pepper instead (haha) and for demerara sugar.. it's someting like cane sugar (gula tebu) .. i ddint have, so i just used brown sugar.. haha.. i used mustard powder btw. it tasted good.. hahaha.. it can be served with Sweet Corn Pudding :P and by the way, it doesnt really work on chickens this way.. there's another way to cook chicken with coke.. which i've yet to try :P

ok.. i know we've been posting about stuffs that we made that turn out.. now lets see some of the stuffs that DID NOT turn out well .. first up. mango pudding i googled for the recipe and i think i found it in about.com .. (i think) .. it dint quite turn out how it's suppose to be... ![]() mango squares ![]() heart shaped mango pudding 2nd .. yeah and i wanted to make Ham in Coca Cola for the upcoming potluck (which is over now) .. and i used chicken breast meat to try out ... the taste was nice. but the chicken was terribly hard.. maybe because it's breast meat anyway. so for pot luck, i thought of using chicken thigh .. or if i'm lucky enough to find the Gammon (a type of ham).. ![]() chicken in coke.. yes COKE !!! ![]() see the difference !??! heh heh heh ![]() in the end, i toasted it with some cheddar cheese.. haha 3rd.. fortune cookies it turned out to be like ... CREPE ! u know it's suppose to be like hard n crispy n cookie-like ..but i dont know why .. it's soft .. well .. i got the recipe from one of the books from women's weekly (aus version, u know those small lil booklets) this was suppose to be for pot luck also, but since it did NOT turn out, i didnt make it.. ![]() toasted dried coconut ![]() the "suppose-to-be" fortune notes (some are evil, btw) ![]() the mixture that didnt turn out right .. -_-" pppffff okie dokie .. that's about it i guess tata |

Grandmama gave me a choice whether to make banana cake or pandan coconut cake but since there was no banana at home, i went for pandan coconut cake. The cake turned out moist and it was quite nice although i am not a big fan of pandan coconut cake. You know what, within 30 minutes after the cake was out of oven, the cake has distributed out. *hahaha* and i have got an order from my aunt to make another one tomorrow. Wanna take a look at the cake?
Dont worry, you can ring me up when you wish for food testing *i hope* Well, here's the recipe for this cake: Ingredients Cake (A) 270g butter 230g sugar (B) 5 eggs 60ml coconut milk 2 tbsps pandan juice (C) 240g flour 25g custard powder 30g dessicated coconut 1tsp baking powder Topping 40g butter 35g icing sugar 55g desiccated coconut Directions Cream (A) till light and fluffy. Add (B) a little at a time and cream till smooth and light. Fold in (C) and mix till well blended. Pour it into 10" round mould. Mix all the ingredients in Topping and spinkle on top of the cake. Bake at 175C for 50 minutes. Serve. |

i made carrot cake for them.. with cream cheese frosting in between the layers.. this time.. the cake turned out very very nice .. heh heh.. the texture was soft n not dry and the sweetness was just nice .. with the extra cream cheese frosting in the middle, i think it's nicer.. ahhaa i've posted a recipe for the Cupcake version.. this one is different.. from another book actually.. hehe so if u wanna try, scroll down :)
Ingredients 1 cup (250ml) vegetable oil (i used melted butter instead) 3 cups sliced carrots 1 1/3 cups (250g) firmly packed brown sugar 3 eggs 3 cups (720g) firmly packed, coarsely grated sugar 1 cup (120g) coarsely chopped walnuts (i dint add any because i wanted to give my dogs) 2 1/2 cups (375g) self-raising flour
1/2 teaspoon bicarbonate of soda 2 teaspoons mixed spice (ok, i didnt have this so i dint add any) cream cheese frosting 30 g butter 80g cream cheese, softened 1 1/2cups (240g) icing sugar mixture Method Preheat oven to moderate (180 - 190 C). Grease deep 23cm round cake pan, line base with baking paper. Beat oil, sugar and eggs in small bowl with electric mixer until thick and creamy. Transfer mixture to large bowl, then sifted dry ingredients. Pour mixture into prepared pan, bake in moderate oven about 1 1/4 hours. Cover cake loosely with foil halfway throught cooking. Stand cake 5 minutes; turn onto wire rack to cool. Spread Cream Cheese Frosting Cream Cheese Frosting beat butter, cream cheese in small bowl with electric mixer until light and fluffy; gradually beat in icing sugar. HERE !!!

First attempt baking potatoes. Spent a few good hours from cleaning the potatoes, cut the ingredients to watching the oven to check if the potatoes were cooked. I was quite anxious and at the same time, i was worried if the potatoes didnt turn out ok coz i was supposed to make sure that my potatoes were ok and safe before serving my friends for potluck.
I guess the potatoes were really safe and fine right?

Here's the recipe: Ingredients Potatoes Cheddar Cheese Ham Button Mushroom Parmesan Cheese Directions Clean the potatoes, cut into halves. Slice the ham and button mushroom. Sandwich the ham and mushroom with the potatoes. Cover the ham and mushroom with cheddar cheese and also parmesan cheese. Wrap with aluminium foil. Bake at 220 F for about 1 hour. |

there are quite alot of places that has steamboat, but this place has extra suffs.. it's porridge + steamboat.. so meaning the soup is porride and the steamboat stuffs.. steamboat loh ! anyway this place is in Bayu Perdana, Klang it's very reasonable actually.. the place also has Bah Kut Teh in the morning.. the bkt is also very nice.. but maybe the feng shui is not good.. ahhaha.. not alot of customers..
it's nice.. really.. when any of u is in klang.. u can go that place n eat .. it's in Bayu Perdana.. the 'red' shops. that row (same as Pizza Hut) .. it's next to 99 supermarket :) oh.. it's called Hau Ching Xiang Restaurant .. oh.. they also have other dishes.. like those 'tai chao' =) mel & yeemei can add comments here.. ahha they've been there too !! |
